Rice, glorious rice.

It’s Monday, so I’m sharing a simple, everyday pantry ingredient that’s beautifully versatile and easy on the purse. Today’s star ingredient is RICE!

Here’s 6 dinner ideas for you to sink your fork into:

1. Make burritos filled with rice, beans, cheese, and veggies for a healthy, plant-packed meal. A good aioli, mayo, or sour cream is also essential here.

2. Make a Mediterranean-inspired rice salad. Toss with plenty of freshly chopped herbs and various flavour bombs such as olives, capers, sun-dried tomatoes, or jarred artichokes. Roasted vegetables or fresh rocket makes a fab addition, as does a zesty salad dressing.

3. Coat leftover risotto with breadcrumbs to make fried rice balls. Stuff with mozzarella and serve with garlicky tomato sauce to elevate your dish to perfection.

4. Make rice-stuffed eggplant, peppers, courgettes, or tomatoes. Lots of fresh herbs and some grated parmesan is tremendous here.

5. Use rice as a base for cheesy baked gratin. A fantastic dish to hide lots of vegetables, too. Think grated carrot, courgette, or even frozen peas, beans, or spinach, cloaked in a crisp, cheesy topping.

6. Make a pretty rice bowl topped with your choice of tofu, fish, or meat, various dips and sauces, and freshly sliced vegetables. Top it off with some aioli or mayo - I’m obsessed with Kewpie!
