5 simple ways with peanut butter

Each Monday, I promised to highlight a staple ingredient along with a bunch of simple ideas of what to do with it. Today I’m focusing on the one and only peanut butter!

Here’s 5 ways that I love to enjoy peanut butter:

1. Stir into pumpkin or kumara soup for richness. Some spices such as nutmeg or chilli make it even more fantastic!

2. Spoon onto slices of apple, banana or celery for quick, nutritious snack.

3. Blend with frozen sliced bananas and a touch of vanilla for the most wonderful instant icecream.

4. Make a velvety peanut butter smoothie, combined with oat milk, frozen mango, dates and raspberries.

5. Use as the base for a satay sauce and spoon generously over fried tofu, chicken or prawns. Lovely piled upon warm rice with a quick shaved vegetable salad.

6. Lastly, enjoy straight from the spoon! This is a daily indulgence for me.
