Phew. Six chapters completed, and three more to go. I've deeply enjoyed writing my next book, but oh! let me tell you, it's been quite a challenge, thats for sure. It's refreshing working on something other than a cookbook for a change, and I just know you are going to love it, my friends!
A few of you have been asking, will there still be recipes? and yes, there will be a few dotted throughout the pages, amidst the other goodness. I've decided to share one with you today, as it simply can not wait until the book is released later this year by Penguin Random House.
Let me know if you try it out, I'd love to hear what you think? feel free to leave a message in the comments below. Eleanor x
CREAMY CHAMOMILE, HONEY AND NUT MILK TEA
The infusion of chamomile in this creamy, hot tea helps me to feel ready for a good night’s sleep. It’s lightly sweetened with a little honey, although pure maple is another thought. The creamy factor comes from steeping the tea in nut milk, I know this might seem a little intriguing, but it’s surprisingly delicious nevertheless. If you try it out, I'd love to hear what you think in the comments below! Much love, Eleanor x
2 cups nut milk
2 chamomile tea bags
1 tsp pure vanilla extract
a pinch of ground cinnamon
1 tbsp honey, or a little more depending on how sweet you like it
Also, in case you were wondering, I used Lumojo Kamahi honey, it's my absolute favourite.
Combine all ingredients in a small saucepan, over medium heat. Bring to a gentle simmer, whilst stirring, and then set aside to cool for a minute or so. Remove the tea bags, pour in to mugs, and enjoy.
