I love how a fantastic dressing can elevate the simplest of salads into something spectacular. I'll often make up a jar to keep in the fridge and drizzle over vegetables as needed (also brilliant for sourdough dipping).
Here's my basic recipe: place 2/3 cup extra virgin olive oil, 1/3 cup apple cider vinegar or lemon juice, a dollop of dijon mustard, 1 clove of finely minced garlic, 1 tbsp finely chopped herbs, and a good pinch of sea salt and pepper in a jar. Shake gently before using. Eleanor X
