This delicious garlic cauliflower mash is a healthier take on the classic and comforting mashed potato. Perfectly creamy, with a subtle note of nutmeg, this mash can be served with most meat, or vegetarian dishes.

1 head of cauliflower, broken in to florets
2-3 cloves of garlic, finely minced
1 heaped tbsp dijon mustard
1/2 tsp nutmeg
3 tbsp ghee, butter or olive oil
a dash of cream (optional)
a handful of grated parmesan (optional)
sea salt
Place the cauliflower in to a large pot, and cover with water. Bring to the boil, then simmer until well cooked. Strain in a colander then return to the pot along with the garlic, mustard, nutmeg, ghee, parmesan and cream if using. Season generously with sea salt and pepper, then mash well with a potato masher. 
Serves 4
