  The loveliness of tamarillo eludes some people, although when sweetened with honey and poached in a light syrup of red wine, orange and star anise, the result is meltingly tender, and perfectly tangy. COCONUT CHIA PUDDING WITH PASSIONFRUIT

I'm sure the world doesn't need another chia seed pudding recipe, but I couldn't help myself, as this variation is so easy (and pretty!). The recipe calls for coconut cream and a touch of maple, although just enough to enhance without being overly sweet. The most delicious inclusion, however, is a spoonful of fresh, tangy passionfruit. It's beautiful, vibrant and lusciously creamy, you might like to try it this weekend? PEANUT BUTTER MUESLI BARS

To put it simply, these two minute muesli bars are too easy not to make, particularly if you have a thing for peanut butter, like I do! The recipe is wonderfully adaptable, for instance, you could use almond butter if you're not a fan of peanut, or pumpkin seed butter to become nut-free.
