Day 3/10 of my homemade gift guide.

These sweet little jars are filled with preserved figs with vanilla + raisins. Brilliant in a toasted sandwich with golden melted cheese, on crostini paired with ricotta. Or simply as part of a summer cheese platter.

1 brown onion, finely diced
2 cups dried figs, stems removed + roughly chopped
1/2 cup raisins or sultanas
1 1/2 cups water
1/2 cup brown sugar
1/4 balsamic vinegar
2 tsp vanilla paste

In a large saucepan, heat 2 tbsp olive oil over medium heat. Add the onions and cook until translucent, about 5 minutes or so.

Add the remaining ingredients, place the lid on top, and simmer on low for 20 minutes until the figs are tender and cooked through.

Remove the lid and cook for a further ten minutes, whilst stirring every so often, until the liquid reduces to become like a thick syrup.

Spoon into sterilised jars whilst hot, allowing about 1cm from the top.

Run a knife around the insides of the jars after they have been filled to remove any air bubbles. Press the lids inwards to ensure they are airtight, and then screw on tightly.

Makes 6 small jars (about 130ml each).
