OVERNIGHT BIRCHER WITH PINEAPPLE, COCONUT + CHIA

Say hello to this simple throw-together breakfast that you can prepare the night before. Simply grab from the fridge in the morning and top with fresh fruit for a simple, healthy breakfast.

Here’s the simple recipe:

Combine 1 cup chopped pineapple with 1 1/2 cups coconut milk in a blender, and blend until smooth.

Add 1 cup rolled oats, 2 tbsp chia seeds + 1 tsp pure vanilla extract. Pulse until just combined, and then pour into small cups or bowls.

Cover with beeswax wrap, or store in a larger airtight container if needed.

Pop in the fridge overnight or for at least 4 hours. Serve with fresh fruit. ✨
