My husband proclaimed this divine chocolate peppermint slice to be 10/10, and believe me, this is incredibly high praise as he's usually blatantly honest when it comes to trying my new creations. The base is slightly crumbly with a fudge-like texture, whilst the filling is luxuriously silky and indulgent. To deliver perfection, I've topped it with a rich, coconut-oil chocolate ganache that's seriously delicious.

For the base:
1 cup ground almonds
1 cup medjool dates, pitted
2 tbsp good quality cocoa
2 tbsp coconut oil, melted
2 tbsp water
pinch of sea salt

For the peppermint filling:
1 cup coconut cream,
1/2 cup coconut oil, melted
4 tbsp cashew or coconut butter
1/3 cup pure maple or rice malt syrup
10 drops peppermint essential oil
For the chocolate ganache:
1/2 cup coconut cream
1/4 cup coconut oil, melted
1/4 cup pure maple or rice malt syrup
4 tbsp good quality cocoa powder


Add the dry base ingredients to a food processor, and process for twenty seconds or so, until the mixture resembles coarse bread crumbs. Add the coconut oil and water, and pulse until the mixture starts to come together. Press mixture evenly into a small slice or loaf tin lined with baking paper.

Add all filling ingredients to a food processor or blender, and blend until silky and smooth. Pour the filling on top of the base, and smooth out evenly using a spatula.  Pop in the freezer to set for at least 20 minutes, while you prepare the chocolate ganache.

Add all ganache ingredients to a food processor or blender, and blend until silky and smooth, add a little more coconut cream if necessary, to create a thick pouring consistency. 

Take the slice out of the freezer, and pour the chocolate ganache on top. Smooth out evenly using a spatula, and the place pack in the freezer to set for at least two hours. 

To serve, remove from the freezer and allow to thaw for about 5 minutes, before slicing in to thick pieces. 
Makes approx 8 slices, store in an airtight container in the freezer.
