APRICOT AND CHOCOLATE BUMPER BARS

Posted by Eleanor Ozich on

Gloriously fudgy bumper bars, largely consisting of dark chocolate and chunks of chopped apricot. If you're a kiwi kid, you'll probably know what I'm talking about! They're those addictively soft and moreish little snack bars sitting by the counter at your local dairy or gas station, pretending to be 'healthy' but really, we all know they're not. These are my wholesome version, which coincidently, are vegan too. And while 'wholesome' and 'vegan' might not sound very exciting, trust me, this recipe will not disappoint.

1 cup dried apricots, diced
2 cups rolled oats
1 cup shredded coconut
3/4 cup coconut cream
1/2 cup melted coconut oil
1/3 cup rapadura, coconut or light muscovado sugar
1 tsp pure vanilla bean paste

For topping:
150g good quality chocolate, roughly chopped
1/4 cup coconut cream

Combine all ingredients in a large mixing bowl, and stir using a wooden spoon until the mixture is sticky and well mixed.

At this point, you can either add in the roughly chopped chocolate to the mixture, or reserve for topping instead.

Press the mixture evenly in to a slice tin lined with baking paper.

Melt the chocolate over a double boiler, and stir in the coconut cream until smooth.
Pour on top of the bar mixture, and smooth out evenly.

Place in the fridge to set for about 2 hours or so, before slicing in to bars.

The bars will keep in an airtight container for 6-7 days, and are best stored in the fridge.

Makes about 12 bars.

Hi Eleanor, congratulations on your new website :). I notice there is no search function and no list of recipes, which makes it hard to look for specific recipes or kinds of recipes . Will you be providing one of these soon? I think it would be helpful. Cheers, Rebecca

Hi Eleanor – first of all … I love your work! I’m starting off with your way of eating but I plan to simplify my family’s life a bit too so I’ll be following all your thoughts on this too!
I am FINALLY getting into soaking and sprouting nuts/seeds after a long time if intending to! So I’m looking into dehydrators. .. do you know much about them ? Will one for under $100 do the job ? I am eyeing some new ones up from trade me. … anything you can share on the topic would be appreciated! Cheers, Michelle

These look & sound so delicious!! Can’t wait to make them! Wondering what brand of apricots you recommend? Organic & Sulfur free is important to me however the ones I’ve been buying are lacking in the flavour & tartness that regular dried apricots seem to have…
