Soft and sensuously rich, this chocolate avocado fudge cake is deeply satisfying. Combine the following ingredients in a food processor...the flesh of one ripe avocado, 1/4 cup melted coconut oil or butter, 1 free range egg, or flaxseed egg, 1 cup milk of your choice, 1/2 cup rapadura or coconut sugar, 1/2 cup oat flour, 1/2 cup tapioca or rice flour, 1/2 cup cocoa powder, 1 teaspoon baking soda, 2 tsp pure vanilla extract, 1/4 tsp sea salt. Process until smooth, then tip in to a greased cake tin. Bake for 30 minutes at 160 C. Leave in the tin to cool before carefully turning out on to a plate. Drizzle with good quality, melted dark chocolate.
