OVERNIGHT BIRCHER WITH MANGO COCONUT YOGHURT
Here's a simple recipe for overnight bircher, it's like sunshine in jar, and takes a mere few minutes to prepare.1 cup rolled oats, I used the Bob's Red Mill brand
1 1/2 cups whole milk, or nut milk for dairy free
1 cup mango coconut yoghurt, I used Raglan Coconut Yoghurt
2 tbsp chia seeds
1/2 cup shredded coconut
honey or pure maple syrup to sweeten, optional
fresh fruit to serve
Place all ingredients in to a bowl, and whisk gently until well combined. Cover, and place in the fridge overnight.
Serve topped with fresh fruit, best enjoyed outside, in the morning sunshine.
