Ok, so you guys have made it VERY clear that you enjoy fudge recipes, so I thought I'd create another one to set your tastebuds dancing.
I'm calling it cashew, coconut and lemon fudge, and my gosh, it's ridiculously delicious. As always, I’m eager to hear what you think, so please do let me know if you give this one a go. x
3/4 cup coconut cashew butter
1/2 cup desiccated coconut
1/2 cup coconut oil, melted
Juice of one lemon
10 drops lemon essential oil, or zest of one lemon
1/4 cup pure maple syrup
a pinch of sea salt
1/2 cup coconut flakes, for topping
Add all ingredients to a food processor, and pulse until well combined.
Spoon the mixture in to a small slice tin or container lined with baking paper, and smooth out evenly. Top with the coconut flakes.
Pop in the freezer to set, for at least 2 hours.
Slice in to squares, and enjoy!
Makes about 12 pieces.
Store in the fridge for up to two weeks (if it lasts that long!) x
